Key Lime Pie Protein Cheesecake

Cool off this summer after your strength workout with Caitlin’s Key Lime Pie Protein Cheesecake! With her savvy knowledge of nutrition and her Betty Crocker cooking skills, Caitlin concocted this heavenly recipe, great for a quick snack, or to replenish after a great BAC workout!

Key Lime Pie Protein Cheesecake
 
Crust:
¾ cup graham cracker crumbs
1 scoop vanilla protein powder
4 Tbsp melted coconut oil
A few squirts of liquid Stevia
Mix all ingredients until well combined, then scoop 1-2Tbps into the bottom of silicone cupcake liners.  Set aside.
 
Filling:
2 eggs
12 oz Fat Free cream cheese
10.6 oz Plain Greek Yogurt
¼ cup Stevia
2 scoops vanilla protein powder
7 Tbsp lime juice (depending on your tastebuds!)
3 tsp lime zest
Mix all ingredients until smooth. Pour into parchment paper lined 6×2 round cake pan.  Top with crust topping and put in the oven on 325 for 30 minutes. After 30 minutes drop the oven temperature to 200 degrees and cook for another 50 minutes. Take your cheesecake out, let it cool, then wrap it up and put it in the fridge for a few hours to serve cold.
